In Fine Fettle readers, welcome back to the blog.
This Christmas break has been full of smiles, laughter, family and even a little baking (but mainly only because my aunt sewed me this super cute apron for Christmas).
The next time back I am hoping on sharing a little life update with you all but for now lets go right into the recipe. If you are looking for a yummy snack or quick and easy breakfast? Well, you’ve come to the right place.
3 cups quick oats
2 cups old-fashioned oats
1 ¼ cups Rice Krispies
½ cup sunflower seeds
1 cup nuts
¼ cup olive oil
1 cup butter, melted
1 cup natural peanut butter
¼ cup honey
2 ½ teaspoons vanilla
½ teaspoon salt
1 ½ cups chocolate chips (optional)
Mix first six ingredients, then coat with olive oil. In bowl, combine melted butter, peanut butter, honey, vanilla, and salt. Pour over first mixture and mix well. Stir in chocolate chips. Press mixture into jelly roll pan (or any pan will work). Press hard so bars won’t be easy to crumble. Bake at 375 degrees for 20-25 minutes or until golden. Store in refrigerators.
This recipe is from the Amish Cooking Class Cookbook by Wanda and Brunstetter.
